Every Italian region approaches the festive season in its own way, but panettone is the one ritual everyone agrees on. A tall box on the counter. A soft dome waiting to be sliced. The quiet pride of a bakery doing things properly for decades.

At Mercato Pronto, we choose panettoni by taste, provenance, and the hands behind the craft. This year’s collection gathers three regional styles, each with its own character, all naturally leavened through long, slow fermentation.

 

Panettone Pere e Cioccolato

Soft, warm and quietly indulgent. A slow-risen dough threaded with dark chocolate chips and pieces of delicate pear. The chocolate rounds the fruit’s sweetness without taking over, a clear, comforting balance. Often the one children reach for first.

Pairs well with: Prosecco DOC.

Panettone Classico Milano

The original tall, fragrant, unmistakably Milanese. The classic Panettone Alto: naturally leavened, dotted with candied orange, cedar and sultanas. Light, airy and gently sweet, the quiet elegance of traditional Milan baking.

Pairs well with: A dry, graceful sparkling wine, like our Primavere Frizzante 

 

Panettone Basso Piemontese
A low Piedmontese classic with an almond crust. Soft, slow-risen dough with candied orange, cedar and sultanas. Finished with a glaze of sugar, almond flour and hazelnuts that bakes into a delicate, crisp shell, the defining Piedmontese contrast of crust.

Pairs well with: Moscato d’Asti or an elegant sparkling wine.

 

Pasticceria Racca

Founded in Turin in 1953, Racca began as a small family workshop and grew into a bakery known across Piedmont for its honest, time-honoured sweets. In 2024, the new generation renewed its direction but not its values: natural yeast, thoughtful ingredients, and a steady hand. Classic craft, without the fuss.

How to Enjoy Panettone, the Pronto Way

• Slice at room temperature for the best texture.

• No warming panettone ! prefers to stay soft and natural.

• Serve with mascarpone. Absolutely essential.
