Collection: Aubergine Parmigiana

A southern Italian classic: layers of grilled aubergine, tomato sauce, mozzarella + lots of Parmigiano, baked until bubbling.

SERVES 4
Slice + salt aubergines, grill until soft.
Layer with sauce + cheese (mozzarella / scamorza / caciocavallo) + Parmigiano.
Bake
180°C for 30 mins until golden. Finish with basil.

CHEESE TIP:
Caciocavallo melts beautifully here.
