Castel Rosso is a semi-hard, crumbly cheese made from pasteurised whole cow’s milk and left to acidify naturally. The flavour is refined, balanced, and delicately piquant, developing occasional natural marbling as it ages. A beautiful example of careful maturation and traditional craft.

About The Producer
Sordevolo, a small village in the upper Elvo Valley in the Biella Alps. It is 1894, and Rosa Pidello Rosso starts her business of production, maturing and trading of typical cheeses. Today, more than a century later, Enrico and Riccardo Rosso continue to keep this culture alive with the same passion, with the help of the whole family and a team of expert artisans. The company is driven by values rooted in tradition, a deep respect for the environment, and an uncompromising pursuit of taste.
