Cravot is a matured, semi-soft cheese made from goat’s milk. Aged in underground cellars on pine shelves for 45 to 60 days, it develops a pale yellow paste with a creamy texture and evenly distributed small holes. Its flavour is delicate, with a clean and slightly aromatic finish. A perfect introduction to goat’s cheese. Balanced, subtle and refined.

Caseificio Rosso has been producing cheese in the alpine village of Sordevolo, Piedmont since 1894. Founded by Rosa Pidello Rosso, the dairy is still run by the Rosso family today, now in its fourth generation. Every cheese is made with care and respect for tradition, combining artisanal skill with the unique characteristics of the Biella Alps. Their work is rooted in the land, time, and passion—and it shows in every wheel.
