Vegetarian parmesan style hard cheese, raw-milk cheese aged for more than a year, steeped in Sicilian salt brine and set with Cynara cardunculus rennet. Complex, savoury layers make it superb on a cheese board with honey or grated as a vegetarian stand-in for Parmigiano.

KINARA METOHD: Using vegetable rennet the Fiandino farms have created, first in the world, the Kinara method, which sees the use of the flowers of the Cynara cardunculus plant, a common wild cardoon which also grows naturally on our mountains, that turns into "real vegetable rennet".

About The Producer

Fattorie Fiandino, founded in 1920 in Villafalletto at the foot of the Cuneo Alps, is run today by cousins Mario and Egidio Fiandino. Working with their own Bruna Italiana herd and selected local dairies, they champion animal welfare, mountain micro-climates and a full line of vegetable-rennet cheeses that marry tradition with careful innovation.
