About The Producer

The Gorgonzola cheeses in this selection are made by Palzola, a family-run dairy in the Novara province of Lombardy. Each wheel is still filled, pierced and matured by hand, following traditional methods that create the distinctive texture and depth of flavour for which Gorgonzola is known.
Blu Divino is produced by a specialist northern Italian dairy and washed with wine during maturation, developing a delicate aromatic rind and a rich, complex character that reflects the close relationship between Italian cheesemaking and winemaking traditions.
Together, these cheeses represent three distinct expressions of Italy’s blue cheese heritage.
