Salcis was founded in 1941 in Siena, Tuscany, combining the region’s traditions of butchery and cheesemaking under one roof. Today, they produce award-winning raw milk Pecorino using local sheep’s milk and age their cheeses naturally in cellars to develop deep, Tuscan character.
