Firm, nutty sheep’s milk cheese aged for at least 4 months for a sharper, more structured flavour. Straw yellow paste with notes of hay and dried fruit. Slice thinly for aperitivo or pair with chestnut honey.

 

About The Producer

Salcis (Società Anonima Lavorazione Carni Insaccati Siena) was founded in 1941 to unify Siena’s traditional pork butchers during the war. Still based in Siena today, they produce classic Tuscan salumi and pecorino using local pork and sheep’s milk, keeping age-old recipes alive with proper, small-scale production.
