About The Producer
The Fiamingo family have cured ’nduja on the northern slope of Monte Poro since 1999, carrying on the craft begun in the 1950s by father Tommaso “U Lisciu”. Their small workshop in Spilinga harnesses the area’s sea-breeze microclimate and sticks to a no-preservative recipe, turning local pork and sun-ripened peppers into the region’s most famous fiery spread.
