About The Producer
Since 1941, Salcis has been producing traditional Tuscan cured meats in the heart of Siena. Their name stands for "Società Anonima Lavorazione Carni Insaccati Siena" and they started by gathering local artisans to preserve and celebrate the region's pork butchery tradition. Today, still family-run, Salcis combines strict adherence to Tuscan recipes with a dedication to animal welfare and short supply chains. Their small-scale production and careful sourcing of Italian pork guarantees quality, while their range of products, from Finocchiona to Tuscan sausages, reflects a pride in the region's flavours and techniques.
