Since 1941 Siena’s pork butchers united as Salcis to protect local charcuterie traditions. By 1960 they’d added sheep’s-milk cheeses, and today their facility at the foot of Monteriggioni Castle blends wartime ingenuity with modern standards to produce authentic Tuscan specialties.
