Gorgonzola in this selection comes from Palzola, an award-winning dairy in the Novara area of Lombardy, where every wheel is still filled, turned and pierced by hand before being aged in climate-controlled cellars.
The remaining cheeses are sourced from trusted mountain and Sardinian producers who continue traditional cheesemaking using local milk and slow ageing techniques.
